Day 1: Faux Pho – Lamb Broth with Daikon Noodles

Hearty and extremely filling.

Go into any 5 star restaurant, and you’ll find a large pot of broth simmering, the secret ingredient that imparts a complex flavor to any dish.

Bone broth is one of the most nutritious things out there. It is extremely easy to digest and is high in minerals and amino acids in a form the body can absorb easily. So it’s only natural that it is the staple of our healing diet.

Nutrients:

Minerals – Calcium, magnesium, phosphorus, potassium, silicon, sulfur

Amino Acids – the building blocks of proteins – Glycine, proline, arginine

Others – chondroitin sulfates, glucosamine

Lamb broth – local lamb neck bones from whole foods simmered in the crockpot for 24 hours. Plenty of marrow.

Daikon noodles – organic daikon made into noodles using a vegetable peeler. Cooked 20 min (too long, would have preferred 10 min)

Shitake mushrooms – cooked 10 min. Perfect

Scallions – from the garden

Filter out the bones better next time.
